S’mores Cookies Recipe

Ingredients: 

  • 1 cup Salted Butter softened 
  • ¾ cup Brown Sugar 
  • ½ cup Granulated Sugar 
  • Large Eggs 
  • 1 teaspoon Vanilla Extract 
  • 2 ½ cups All-Purpose Flour 
  • 2 teaspoons Cornstarch 
  • 1 teaspoon Baking Soda 
  • 1 teaspoon Salt 
  • 2 cups Mini Marshmallows 
  • 2 cups Graham Crackers broken up into small pieces (about 9-10 crackers), divided 
  • ½ cup Milk Chocolate Chips 
  • ½ cup Semisweet Chocolate Chips 
  • Hershey’s Bars broken into pieces 
  • Maldon Salt (optional) for garnish 

Directions: 

  1. Preheat oven to 375 degrees F. Line two baking sheets with parchment paper. 
  1. In a large mixing bowl, combine butter, brown sugar, and granulated sugar. Beat for 2-3 minutes until creamy. 
  1. Add eggs and vanilla and beat until well incorporated. 
  1. Add flour, cornstarch, baking soda, and salt – mixing until just combined. 
  1. Add 1 ½ cups of graham crackers, 1 ½ cup marshmallows, milk chocolate chips, semi-sweet chips, stirring until just dispersed throughout the dough. 
  1. Use a cookie scoop (about 3 tablespoons of dough) to drop dough onto parchment paper – no need to roll these. Leave room for cookies to spread. Bake approximately 8-10 minutes, or until the top of the cookie is starting to turn golden. Every oven is different, so please make sure to keep an eye on these to ensure the proper amount of baking time! 
  1. Once finished, pull the cookies out of the oven and garnish by pressing the remaining marshmallows and graham crackers into the cookie, as well as your broken up Hershey Bars. I also like to add a sprinkle of Maldon Salt on top to enhance the flavors.  

Note: It is best practice to leave cookies on the baking sheet for a few minutes after pulling them out of the oven. This ensures the bottom of your cookies have hardened and are fully cooked. Enjoy!
